The Warehosue Bistro, located in Opelika's oldest industrial park since 1993, is the area's best in casual fine dining. It has often been described as "a diamond in the rough," and "Opelika's best-kept secret." A fire in August of 2017 caused the restaurant to close for repairs. In September of 2018 Chef Paul Diaz expressed interest in the Bistro for its rich heritage and previous popularity in the community. With Chef Paul purchasing the Warehouse Bistro he hopes to bring a resurgence of popularity to the restaurant along with elevating the cuisine to a more modern take on many of the classic Warehosue Bistro dishes many have come to love over the years.
Chef Paul Diaz grew up in Orlando Florida. His mother sparked the love for culinary in his heart from an early age. Mrs. Audrey Rosenthal, was a kitchen manager so naturally he was always helping her out. Today, Mrs. Audrey Rosenthal owns a very successful Deli, Daly News Too, in downtown Orlando, FL in which Chef Diaz was of major assistance during opening as well as culinary operations in the first few years.
Chef Paul Diaz attended culinary school in Florence, Italy for two years while also working in Italy which allowed for him to both learn and perfect the traditional as well as the modern Italian cuisine.
His work experience includes but is not limited to luxury and 5-star resorts, including: The Ritz Carlton in U.S. Virgin Islands, Walt Disney World Resort in Orlando, the luxurious Resort at Pedregal in Cabo San Lucas, Mexico and former Capella Teluride, now The Madeline Hotel, in Colorado. Chef de Cuisine Ariccia, Italian Trattoria and Piccolo lounge at the Auburn University Hotel and Conference Center.When time allows, Chef Paul enjoys, Cooking at home with his family and friends.
