Using local, seasonal ingredients, Schleusner creates dishes like shrimp and grits, braised rabbit pasta and grouper with pecan sauce.

The kitchen prepares the grouper by sauteing a tender fillet in olive oil until done but not dry. The fish is served with a pecan cream sauce unique to The Rawls, adding an unexpected but delicious sweetness not typically paired with fish.
