Referred to as "greens," the poke salat is L'Rancho's signature dish. They pick the poke salat out of the fields of Marshall county in the spring and cook it three times before it is served (because it's poisonous). L'Rancho is also home to the annual Poke Salat Bluegrass Festival held every May. (available Wednesdays or Thursdays)
