Authentic Porchetta is unique to Ariccia Cucina Italiana. This Italian staple, originating from Ariccia, Italy, and dating back into the 15th century, is celebrated annually at the festival “Sagra della Porchetta di Ariccia.” This classic dish is found throughout Italy in sandwich shops, food trucks and on restaurant menus. The Porchetta is seasoned with classic Umbrian seasonings of salt, pepper, rosemary, garlic and wild fennel, then rolled and slow roasted for eight hours and sliced to order.
Ariccia's Porchetta is served with baby spinach, cherry tomatoes, roasted garlic, preserved lemon and herb fingerling potatoes and confit lemon vinaigrette.
